Ingredients

  • 2 boneless, skinless chicken thighs

  • 2 burger buns

  • ¼ head lettuce

  • 1 shallot

  • Vegetable oil

  • Garam Masala seasoning

  • Brooklyn Delhi Mango Chutney

  • Optional: parsley

Marinade

Tikka Masala Mayo

Breading

  • 1½ cup all-purpose flour

  • 2 tsp paprika

  • 1 tsp salt

  • ½ tsp onion powder, garlic powder, and black pepper

Instructions

  1. Pat dry 2 boneless, skinless chicken thighs.

  2. Marinade: in a mixing bowl, combine ½ cup Tikka Masala sauce and ½ cup buttermilk in a mixing bowl. Add in ½ tsp salt, ¼ tsp onion powder, garlic powder, and cayenne pepper. Whisk.

  3. Add the 2 boneless, skinless chicken thighs into the marinade. Cover the bowl with cling wrap and let the chicken marinate for a minimum of 30 minutes inside the fridge.

  4. To make the mayonnaise, combine ¼ cup Tikka Masala sauce and ¼ cup mayonnaise in another mixing bowl and set aside.

  5. Dredging: in another mixing bowl and combine 1 ½ cups of all-purpose flour along with 2 tsp of paprika, 1 tsp of salt, ½ tsp of onion powder, garlic powder, & black pepper. Whisk.

  6. After it marinates, dredge each chicken on the breading until they are completely coated.

  7. Deep-frying: heat up about 3-4 cups of oil into a saucepan until it reaches 350° F then add in the chicken thighs. Depending on saucepan size, add in one at a time or multiple.

  8. While the chicken deep-fries, toast the burger buns in a separate pan with vegetable oil.

  9. Maintain the oil temperature between 300°-350° F and pull it out once the chicken’s internal temperature reaches 165° F. Sprinkle it with garam masala seasoning.

  10. Assembling: spread the Tikka Masala mayo on the bottom bun, then place the fried chicken on it (optional to spread Mango chutney on the chicken), place lettuce and parsley on top of the chicken, and spread more mayo on the top bun while adding thinly-sliced shallots on it.
